Raw Hummus Recipe
makes about 2 pounds

1 large cup organic garbanzo beans
4 - 6 garlic cloves -- or more if you like
2 lemons -- to taste
2 tablespoons tahini
1 teaspoon sea salt
Soak the beans 24 hours. Let sit for 2 - 3 days until sprouts are about 1/2 inch long. Rinse once or twice a day. Boil big pot of water, let sit for 60 seconds. Soak sprouted beans in hot water for 60 seconds. If you don't do this step, the hummus will be awful. Drain beans and transfer to food processor. Add all ingredients and blend. Add purified water as needed. It will take about 3 to 5 minutes to blend. Let sit for 5 minutes in the food processor and allow the beans to absorb the liquid.  If too thick, add more water. Vary the amount of salt, lemon and garlic for your taste. Garnish with paprika. When I serve this I make a depression in the middle and fill it with olive oil. Serve with pita bread, carrot or celery sticks or small romaine leaves. Raw Hummus has all the enzymes necessary for digestion and produces very little gastro-intestinal gas. For a different flavor I add a half cup of sun dried tomatoes that were soaked in warm water till soft. -- Emil Kalil
